Bar Substitute is a person who is employed by the licensee to replace to replace him (as a substitute or agent) in the licensee’s absence. This shall apply only where alcoholic beverages are sold or served. Persons who will act as a substitute in the absence of licensees and/or operators in a catering establishment, and will be responsible for the selling of wines and spirits, need to apply for this permit.
